Karahi ya heavy-bottomed pan mein medium-high heat par oil ya ghee garam karein. Zeera add karein aur 30 seconds tak sizzle hone dein.

Ginger-garlic paste add karein aur golden hone tak 1-2 minutes bhunein. Yakeen rakhein paste properly bhune — yeh karahi ki base hai.

Chicken pieces add karein aur high heat par 5-7 minutes tak bhunein jab tak chicken white ho jaye aur halki browning aa jaye. Is step mein zyada oil add karne ki zaroorat nahi.

Tomatoes, red chili powder, coriander powder, salt, aur black pepper add karein. Achi tarah mix karein.

Medium heat par 15-20 minutes tak pakayein, beech beech mein stir karte hain. Tomatoes gal jayenge aur oil alag hona shuru ho jata hai — yeh sign hai ke masala ready hai.

Jab oil sides par alag nazar aaye ('oil floating'), green chilies add karein aur 3-4 minutes aur pakayein.

Garam masala add karein aur ek minute mein flame off kar dein. Zyada pakana nahi garam masala add karne ke baad.

Fresh coriander leaves aur julienned ginger se garnish karein. Hot naan ya roti ke saath serve karein. Lemon wedge squeeze kar ke khayen — taste double ho jata hai!
