Pakistani-Chinese is a localised cuisine in its own right — saucier, spicier, and more meat-forward than either mainland Chinese or the Cantonese-heavy Indian-Chinese tradition. What to look for: Markers for a serious Pakistani-Chinese restaurant: (1) wok hei — proper high-heat wok cooking produces a smoky char absent from chain-style versions, (2) sauce thickness — over-cornstarched sauces are a red flag, (3) prawn quality if seafood is on the menu, (4) genuine sweet-and-sour vs. fluorescent tomato-ketchup versions, and (5) fresh hand-cut noodles vs. boxed.
